easy peasy macaroni and cheesy

Simple, no flour, cheesy, no fuss Mac and Cheese. Does it get any better than that? You can play around with the kind of cheese you use, I always love a nice Wisconsin Cheddar or something along those lines. I've used Gruyere, Fontina or mixtures of a few different kinds. Have fun with it. If you're skidish about eating raw egg, this is not the recipe for you. Alton Brown's recipe.

Ingredients

  • 1 pound elbow macaroni
  • 3-4 - eggs
  • 1 can evaporated milk (12 oz)
  • 1 teaspoon hot sauce (or more if you like)
  • 1 1/2 teaspoons dry mustard
  • 2 1/2 cups shredded wisconsin cheddar (or cheese of your choice)
  • - salt for boiling water
  • - pepper
  • 1/2 stick butter

How To Make easy peasy macaroni and cheesy

  • Step 1
    Bring water to a boil and salt it. Boil macaroni according to package directions. Do not over cook.
  • Step 2
    While pasta is cooking, whisk together eggs, evaporated milk, hot sauce, dry mustard and pepper.
  • Step 3
    Drain pasta but do not rinse. Put back in pot.
  • Step 4
    Add 8 tablespoons butter, egg mixture and cheese. Stir until melted. Enjoy!
