I wanted to do something different with my couscous than the lemon and roasted almonds so I came up with salad and it is good cold or warm.

Ingredients

  • 1 box plain couscous
  • 2 cups chicken broth
  • 1/2 package cherry tomatoes sliced
  • 1 small can chopped black olives
  • 1 small can shitaki mushrooms, or use fresh, sliced
  • 1/3 cup toasted pinenuts
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon capers
  • - juice of 2 limes
  • - zest of 1 lime
  • 3 tablespoons basil pesto
  • - olive oil to drizzle in pasta when mixing

How To Make couscous salad

  • Step 1
    Cook couscous in chicken broth according to package, when done fluff with fork. Saute mushrooms in butter and olive oil until tender and brown, chop. Add mushrooms and all other ingredients to couscous and mix well.
