chorizo and macaroni with feta and tomatoes
Based on the viral TikTok feta tomato pasta, I created this delicious recipe with chorizo and macaroni. It's good with roast chicken.

Ingredients
- 1 tablespoon avocado oil
- 9 ounces soft Mexican chorizo, casing removed and crumbled
- 1 large vidalia sweet onion, peeled and sliced
- 16 ounces dry elbow macaroni
- 2 cups shredded Parmesan cheese, divided
- 1 teaspoon dried basil
- 2 teaspoons garlic pepper
- 2 pints cherry tomatoes
- 1 tablespoon sea salt mixed with black pepper
- 8 ounces block feta cheese
How To Make chorizo and macaroni with feta and tomatoes

Step 1Preheat oven to 350 degrees F.

Step 2Heat avocado oil in a large, deep skillet over medium heat. Add crumbled chorizo and saute for 5 minutes until crisp. Reduce to low heat and stir in sliced vidalia onion.

Step 3Remove from heat, reserving chorizo grease in 3/4 cup and set aside.

Step 4Fill a large pot with lightly salted water and bring to a boil. Stir in macaroni and return to a boil.

Step 5Cook,stirring occasionally, about 8 minutes; drain. Transfer to a large bowl and add 1 cup shredded Parmesan cheese, dried basil and garlic pepper; mix well.

Step 6Place cherry tomatoes, sea salt/black pepper and chorizo grease in a 8-inch casserole dish. Add the block of feta cheese in the center of tomato mixture.

Step 7Bake in the preheated oven for 35 minutes.

Step 8Remove from the oven and cool completely. Mash with a fork for 40 seconds. Add crumbled chorizo and macaroni mixture and mix well until combined. Sprinkle with remaining Parmesan cheese.
