chorizo and macaroni with feta and tomatoes

Based on the viral TikTok feta tomato pasta, I created this delicious recipe with chorizo and macaroni. It's good with roast chicken.

Ingredients

  • 1 tablespoon avocado oil
  • 9 ounces soft Mexican chorizo, casing removed and crumbled
  • 1 large vidalia sweet onion, peeled and sliced
  • 16 ounces dry elbow macaroni
  • 2 cups shredded Parmesan cheese, divided
  • 1 teaspoon dried basil
  • 2 teaspoons garlic pepper
  • 2 pints cherry tomatoes
  • 1 tablespoon sea salt mixed with black pepper
  • 8 ounces block feta cheese

How To Make chorizo and macaroni with feta and tomatoes

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Heat avocado oil in a large, deep skillet over medium heat. Add crumbled chorizo and saute for 5 minutes until crisp. Reduce to low heat and stir in sliced vidalia onion.
  • Step 3
    Remove from heat, reserving chorizo grease in 3/4 cup and set aside.
  • Step 4
    Fill a large pot with lightly salted water and bring to a boil. Stir in macaroni and return to a boil.
  • Step 5
    Cook,stirring occasionally, about 8 minutes; drain. Transfer to a large bowl and add 1 cup shredded Parmesan cheese, dried basil and garlic pepper; mix well.
  • Step 6
    Place cherry tomatoes, sea salt/black pepper and chorizo grease in a 8-inch casserole dish. Add the block of feta cheese in the center of tomato mixture.
  • Step 7
    Bake in the preheated oven for 35 minutes.
  • Step 8
    Remove from the oven and cool completely. Mash with a fork for 40 seconds. Add crumbled chorizo and macaroni mixture and mix well until combined. Sprinkle with remaining Parmesan cheese.
