Ingredients For cheesy green chile kugel

  • 4 Tbsp
    unsalted butter, melted (plus more to butter the baking dish)
  • kosher salt to taste
  • 12 oz
    wide egg noodles
  • 2 lg
    eggs, plus 3 egg whites
  • 12 oz
    roasted chopped green chilies, mild (canned) - hatch or other brand
  • 1-2 Tbsp
    fresh lemon juice
  • 2 can
    14-oz. cans artichoke quarters (packed in water) and drained
  • 3 c
    grated sharp white cheddar cheese (or a combination of your choice of cheese)

How To Make cheesy green chile kugel

    Preheat your oven to 350 degrees F. Butter a 9 x 13 inch baking dish and set aside.

    Boil noodles in salted water - cook until softened, but not cooked through. Noodles will cook further in the oven. Drain well and add noodles to a large bowl.

    Whisk the eggs and the egg whites in a medium bowl until mixed well. Mix in 3/4 tsp. kosher salt, then the chilies, lemon juice and melted butter. Blend in half of the artichoke hearts and 2 cups of cheese. Pour egg mixture over the noodles and mix well.

    Place noodle mixture in the baking dish. Top with the remaining artichoke hearts and 1 cup grated cheese. Bake until golden brown, approx. 1 hour. Let stand 30 minutes before serving.
