birthday mac & cheese for kimijo
It was so much fun coming up with a mac & cheese with my daughter Danielle for my BD dinner. We used a special Italian pasta called Lumaconi from Italy. I found it at Big Lots. We used 3 different cheeses and milk. It was amazing!!

Ingredients
- 1 - bag of lumaconi pasta
- 4 cups milk
- 4 tablespoons cornstarch mixed in with a 1/2 cup of cool water
- 4 cups shredded cheddar cheese
- 2 cups shredded mozzarella cheese
- 1 cup cubed velvetta
- 1-2 teaspoon prepared mustard
- 1 teaspoon garlic powder
- - salt & pepper to taste

Step 1In boiling salted water cook pasta aladenti. Meanwhile in a lg saucepan add milk, stirring constantly on medium heat. Add in cornstarch mixture to thicken. Add mustard, garlic & salt & pepper. If need be add more salt, pepper, mustard & garlic. We taste along the way. Add cheeses (reserving one cup of both cheddar and mozzarella), till nice and melted and creamy. Drain pasta; in the lg pot put back in the pasta & cheese sauce; mix well. On top of pasta spread the cheeses, cover and bake at 375f for 40 minutes. Remove foil to brown on top.
