I know that most cooks have a favorite mac 'n cheese recipe. This one is mine. I like the ease of stove top cooking and how fast this dish can be "whipped-up". This is my personal favorite cheese combination. YUMMY!!!

macaroni
1 c
sharp new york cheddar cheese, grated
1/2 c
sharp american cheese, grated ( not the wrapped slices stuff) choose a good quality american cheese
1/2 c
swiss cheese, grated
salt and pepper, to taste

Cook macaroni according to package directions.

Meanwhile, grate the cheeses and mix them together.

Drain cooked macaroni and place back in cooking pot. Mix in cheeses, salt, and pepper; stirring until cheese is melted (may place pot on low heat to speed up melting if desired).
