baked macaroni & cheese

I first recieved this recipe from a friend down in Florida who would always take it to church functions. Everyone, including my children, would rave about it. I have changed it slightly to lower some of the fat. This would be a great recipe to sneak vegetables into, like chopped cauliflower.

Ingredients

  • 8 ounces whole wheat macaroni, cooked & drained
  • 1/2 cup light sour cream
  • 1 cup cottage cheese, lowfat
  • 3 tablespoons butter, melted
  • 1-2 - eggs
  • 3 cups cheddar cheese or cheese blend of choice
  • 1/2 cup milk (optional)
  • - salt & pepper to taste

How To Make baked macaroni & cheese

  • Step 1
    Combine sour cream, cottage cheese & egg(s) along with salt & pepper to taste.
  • Step 2
    Add all but 1 cup of cheese & cooked macaroni to mixture.
  • Step 3
    Add the optional milk.
  • Step 4
    Place into greased casserole dish.
  • Step 5
    Sprinkle on the remaining 1 cup of cheese.
  • Step 6
    Bake at 350' until golden.
