I first recieved this recipe from a friend down in Florida who would always take it to church functions. Everyone, including my children, would rave about it. I have changed it slightly to lower some of the fat. This would be a great recipe to sneak vegetables into, like chopped cauliflower.

Ingredients

  • 8 oz
    whole wheat macaroni, cooked & drained
  • 1/2 c
    light sour cream
  • 1 c
    cottage cheese, lowfat
  • 3 Tbsp
    butter, melted
  • 1-2
    eggs
  • 3 c
    cheddar cheese or cheese blend of choice
  • 1/2 c
    milk (optional)
  • ·
    salt & pepper to taste

How to Make Baked Macaroni & Cheese

Step-by-Step

  1. Combine sour cream, cottage cheese & egg(s) along with salt & pepper to taste.
  2. Add all but 1 cup of cheese & cooked macaroni to mixture.
  3. Add the optional milk.
  4. Place into greased casserole dish.
  5. Sprinkle on the remaining 1 cup of cheese.
  6. Bake at 350' until golden.
