baked macaroni & cheese
I first recieved this recipe from a friend down in Florida who would always take it to church functions. Everyone, including my children, would rave about it. I have changed it slightly to lower some of the fat. This would be a great recipe to sneak vegetables into, like chopped cauliflower.

Ingredients
- 8 ounces whole wheat macaroni, cooked & drained
- 1/2 cup light sour cream
- 1 cup cottage cheese, lowfat
- 3 tablespoons butter, melted
- 1-2 - eggs
- 3 cups cheddar cheese or cheese blend of choice
- 1/2 cup milk (optional)
- - salt & pepper to taste
How To Make baked macaroni & cheese

Step 1Combine sour cream, cottage cheese & egg(s) along with salt & pepper to taste.

Step 2Add all but 1 cup of cheese & cooked macaroni to mixture.

Step 3Add the optional milk.

Step 4Place into greased casserole dish.

Step 5Sprinkle on the remaining 1 cup of cheese.

Step 6Bake at 350' until golden.
