apple cider mac-slaw
I created this macaroni salad one day when I was cleaning our my refrigerator and had some cabbage, carrots, apples and apple cider dressing I had to use. It is a delicious "marriage" of macaroni salad, fruit and coleslaw .... some of my favorite summertime flavors. For an extra punch of sweetness, add 1/3 cup sweetened dried cranberries or raisins. If you can't find the apple cider dressing, use a combination of apple juice concentrate and Miracle Whip in place of the apple cider dressing and continue with recipe as written, using the rest of the dressing ingredients as well.

Ingredients
- 1 - 12 ounce box penne pasta (or your favorite pasta shape), cooked as directed
- 1/2 cup diced sweet onion
- 3 stalks celery, sliced
- 4 large eggs, hard cooked and chopped
- 2 cups cabbage, finely chopped
- 1 small gala apple, chopped
- 1 1/4 cups frozen peas, thawed
- 1 - carrot, shredded
- 1 - 16 ounce bottle ken's apple cider vinaigrette
- 1/2 cup miracle whip salad dressing
- 1/3 cup sugar
- 1/2 teaspoon salt
- 4 tablespoons apple cider vinegar
How To Make apple cider mac-slaw

Step 1In a large bowl, combine the cooked macaroni, onion, celery, hard cooked eggs, cabbage, apple, peas and carrots. Toss gently to combine.

Step 2In a medium bowl, combine the apple cider dressing, Miracle Whip, sugar, salt and vinegar. Mix well. (If you can't find apple cider dressing .... I use Ken's ..... substitute apple juice concentrate and Miracle Whip and proceed as written)

Step 3Pour dressing over pasta mixture and toss to coat.

Step 4Cover and refrigerate for 1-2 hours before serving.
