all american cheesy macaroni
This is another of my Macaroni and Cheese recipes in my recipe archives, which actually is just a spiral notebook of recipes! Making this is a simple all american cheesy goodness mac and cheese. Sometimes I add crushed Ritz Crackers drizzle with butter at the end to give it a crunch or I just leave as is. It's up to you. You can change up the shredded cheese with any shredded cheese if you want a different flavor. If you what some cheesy mac, here you go! AHHHH, THE POWER OF CHEESE!

Ingredients
- 2 cups elbow macaroni, cooked
- 2 - eggs
- 1 1/2 cups evaporated milk
- 1/2 stick butter, melted
- 8 ounces extra sharp cheddar cheese, shredded
- 8 ounces mild cheddar cheese, shredded
- - salt and pepper to taste
- 1 1/2 cups ritz cracker crumbs drizzled with a tbl. melted butter (optional)
How To Make all american cheesy macaroni

Step 1Cook Pasta according to package directions until Al Dente. Drain pasta and rinse with cold water to stop the cooking process. In a large bowl, mix together eggs, evaporated milk, melted butter and salt & pepper, to taste. Stir in 3/4 of the cheese and add the pasta. Spray a baking dish with cooking spray and add the pasta mixture. Top with remaining cheese. Bake in a pre-heated 325 degree oven for 30 minutes. In the last 5 minutes you can add crushed Ritz cracker crumbs drizzled with butter on the top and bake for the last 5 minutes.

Step 2Note: If there is excess grease on the surface of your cheese when done, simply blot with a paper towel to remove.
