This is another of my Macaroni and Cheese recipes in my recipe archives, which actually is just a spiral notebook of recipes! Making this is a simple all american cheesy goodness mac and cheese. Sometimes I add crushed Ritz Crackers drizzle with butter at the end to give it a crunch or I just leave as is. It's up to you. You can change up the shredded cheese with any shredded cheese if you want a different flavor. If you what some cheesy mac, here you go! AHHHH, THE POWER OF CHEESE!

Ingredients

  • 2 c
    elbow macaroni, cooked
  • 2
    eggs
  • 1 1/2 c
    evaporated milk
  • 1/2 stick
    butter, melted
  • 8 oz
    extra sharp cheddar cheese, shredded
  • 8 oz
    mild cheddar cheese, shredded
  • ·
    salt and pepper to taste
  • 1 1/2 c
    ritz cracker crumbs drizzled with a tbl. melted butter (optional)

How to Make All American Cheesy Macaroni

Step-by-Step

  1. Cook Pasta according to package directions until Al Dente. Drain pasta and rinse with cold water to stop the cooking process. In a large bowl, mix together eggs, evaporated milk, melted butter and salt & pepper, to taste. Stir in 3/4 of the cheese and add the pasta. Spray a baking dish with cooking spray and add the pasta mixture. Top with remaining cheese. Bake in a pre-heated 325 degree oven for 30 minutes. In the last 5 minutes you can add crushed Ritz cracker crumbs drizzled with butter on the top and bake for the last 5 minutes.
  2. Note: If there is excess grease on the surface of your cheese when done, simply blot with a paper towel to remove.
