A former associate gave me this receipe. I made these when my sister was visiting from Minnesota. She took the leftovers and ate them on the plane!

    small to medium zucchini
  • 1 c
    self rising flour
  • 1/2 c
  • 2 clove
    minced garlic
  • 1 c
    grated parmesan cheese
  • 2

How to Make Zucchini Fritters


  1. Slice zucchini long ways in four and then in thin slices.
  2. Use wire whip to mix flour, eggs and milk to make a slightly thin batter.
  3. Mix in zucchini, garlic and cheese. Add a little milk if batter seems to thick or a little flour if to thin.
  4. Drop by spoon fulls (I use a spoon a little larger than a tablespoon) in to hot oil in large skillet.
  5. Let brown slightly, turn and brown on other side.
    Drain on paper towels.
