zucchini fritters

A former associate gave me this receipe. I made these when my sister was visiting from Minnesota. She took the leftovers and ate them on the plane!

Ingredients
- 2 - small to medium zucchini
- 1 cup self rising flour
- 1/2 cup milk
- 2 cloves minced garlic
- 1 cup grated parmesan cheese
- 2 - eggs
How To Make zucchini fritters

Step 1Slice zucchini long ways in four and then in thin slices.

Step 2Use wire whip to mix flour, eggs and milk to make a slightly thin batter.

Step 3Mix in zucchini, garlic and cheese. Add a little milk if batter seems to thick or a little flour if to thin.

Step 4Drop by spoon fulls (I use a spoon a little larger than a tablespoon) in to hot oil in large skillet.

Step 5Let brown slightly, turn and brown on other side. Drain on paper towels.
