Ingredients
- 6 cups zucchini, peeled and sliced
- 3 tablespoons lemon juice
- 2/3 cup sugar or 4 tablespoon plus 2 tsp splenda
- 3/4 teaspoon cinnamon or use apple pie spice
- 2 tablespoons cornstarch, with just enough water to mix it, to thicken the zucchini
- 2 tablespoons butter
- 1 teaspoon vanilla
How To Make zucchini fried apples

Step 1Peel your zucchini, slice down the middle and scrape out all the seeds. Slice like an apple slice, but not too thin

Step 2Combine zucchini, lemon juice, sugar or sweetener, and cinnamon until well coated.

Step 3Melt butter in a skillet on medium high heat, add coated zucchini and cook on high for 5-6 minutes, stirring every 30 seconds, until liquid cooks down to a bubbly brown syrup

Step 4Stir in vanilla extract and cornstarch thickener, then cook to there is almost no liquid in the pan and zucchini is a little softer.
