Ingredients
- 1 tablespoon butter
- 1/4 cup shallots, finely diced
- 1 can navy beans, drained and rinsed (19 oz./540 ml)
- 1/3 cup low-sodium chicken broth (substitute vegetable broth)
- 1/2 tablespoon freshly squeezed lemon juice
- 1/4 teaspoon hot paprika
- 1/8 teaspoon ground Himalayan pink salt, or to taste
- 1/8 teaspoon freshly ground black pepper, or to taste (i always use mixed peppercorns)
- 1/2 tablespoon extra-virgin olive oil
How To Make white bean puree

Step 1In a saucepan over medium heat, melt butter and when sizzling, add shallots; sauté until translucent, about 1 1/2 to 2 minutes.

Step 2Add beans and broth; bring to a boil.

Step 3As soon as it starts boiling, remove from the heat and pour the mixture into the jar of a blender.

Step 4Add lemon juice, paprika, salt, and pepper. Process until somewhat smooth before slowly pouring in oil through the feeder.
