Ingredients

  • 1 tablespoon butter
  • 1/4 cup shallots, finely diced
  • 1 can navy beans, drained and rinsed (19 oz./540 ml)
  • 1/3 cup low-sodium chicken broth (substitute vegetable broth)
  • 1/2 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon hot paprika
  • 1/8 teaspoon ground Himalayan pink salt, or to taste
  • 1/8 teaspoon freshly ground black pepper, or to taste (i always use mixed peppercorns)
  • 1/2 tablespoon extra-virgin olive oil

How To Make white bean puree

  • Step 1
    In a saucepan over medium heat, melt butter and when sizzling, add shallots; sauté until translucent, about 1 1/2 to 2 minutes.
  • Step 2
    Add beans and broth; bring to a boil.
  • Step 3
    As soon as it starts boiling, remove from the heat and pour the mixture into the jar of a blender.
  • Step 4
    Add lemon juice, paprika, salt, and pepper. Process until somewhat smooth before slowly pouring in oil through the feeder.
