Ingredients

  • 4 - baking potatoes
  • 3 - green onions, thinly sliced
  • 2 tablespoons margarine or butter
  • 1/2 cup half and half or milk, hot
  • 1/2 teaspoon salt
  • dash pepper
  • dash paprika
  • 4 slices bacon, fried crisp and crumbled
  • 2 tablespoons parmesan cheese
  • 4 tablespoons grated, sharp cheddar cheese

How To Make twice baked potatoes

  • Step 1
    Wash potatoes, pat dry.
  • Step 2
    Prick each potato with a fork in several places.
  • Step 3
    Bake at 400* for about an hour or until done. (You want the skins to be a little hard.)
  • Step 4
    Cut a thin slice from top of each. Scoop out the pulp into a bowl.
  • Step 5
    Whip with hot half and half(or milk), until fluffy. Beat in the butter and green onion. Add bacon and seasonings.
  • Step 6
    Spoon into shells. Sprinkle with both cheeses.
  • Step 7
    Place potatoes on baking sheet. Bake at 375* for about 15 minutes or until hot.
