This may sound strange, but it's really very good. My aunt used to serve it at Christmas, and my mother would make it about every couple of weeks because it was one of the few vegetables us kids would eat. My father loved it; I guess his mother used to make it for him. When I fix it again I'll post a picture.

Ingredients For tomato pudding

  • 2 can
    whole tomatoes
  • 1/3 c
    packed brown sugar
  • 4 slice
    bread, buttered and cut into cubes
  • 2 slice
    bread, buttered and cut into halves
  • 2 Tbsp
    brown sugar

How To Make tomato pudding

    Preheat oven to 350 degrees.

    Stir together the tomatoes, 1/3 cup brown sugar, and the bread cubes. Pour into a buttered loaf pan (glass is best, but metal will also work).

    Top with the sliced and buttered bread halves and sprinkle evenly with the remaining brown sugar.

    Bake for 35-45 minutes, until bread on top is nicely browned, puffy, and crisp. Let it get good and brown.
