My mom made these for us growing up. I came from a family of six girls,we all loved them. Hope you will too. If you like stewed tomato's,your likely to like these. I never tried to change this recipe because i like them the way they are,but i'll bet you could add other things.

1-15oz can(s)
1-1 1/2 pkg
sleeve saltine crackers
1/2-1 tsp
2-3 Tbsp
oil for frying

How to Make Tomato Cakes


  • 1Drain liquid well from tomato's,place in medium size bowl. Add as much of the sugar as needed to make tomato's not so tangy,but not too sweet.
  • 2Add enough crackers to make a patty,the size of a potato cake.
  • 3On a greased griddle cook medium heat,til browned about 5 minutes,flip and cook other side. You can also fry in a skillet adding enough oil as needed to keep them from sticking.
