Ingredients

  • 1-14oz package dry black beans
  • 5 cups water
  • 1 large green pepper
  • 1 small onion
  • 3 cloves garlic
  • 1 - bay leaf
  • 1/2 teaspoon cumin powder
  • 1 small oregano leaf or 1/2 teaspoon of dried
  • 1 teaspoon sugar
  • 1 teaspoon vinegar
  • 1 slice tocino ( salted pork)
  • 1/2 teaspoon salt (adjust to taste)
  • 1 small jar roasted red peppers
  • 2 tablespoons olive oil

How To Make the real deal cuban black beans

  • Step 1
    This recipe requires a pressure cooker, however you can make without one...just need to cook a lot longer.
  • Step 2
    place the package of black beans in the pressure cooker, cover with the 5 cups of water, let soak at least 5 hours
  • Step 3
    after the soaking, bring to boil, cut the whole pepper in half and clean out the inside, put in the pressure cooker along with the bay leaf. pressure cook for about 20-30 mins.
  • Step 4
    in the meantime... you are going to make a "sofrito" 2 tablespoons of olive oil,finely diced onion, cut up "tocino" (salted pork) and garlic...
  • Step 5
    after pressure is released, open and add the "sofrito" to the soften beans...continue boiling at a gentle boil..add the oregano, cumin, salt, sugar, vinegar, roasted red peppers...simmer about an hour, stirring occasionally as to not stick at the bottom. Should be nice and thickened...Yum
