Ingredients
- 1 cup fine bulgur
- 1 cup boiling water
- 3 cups finely chopped fresh parsley
- 1/4 cup finely chopped fresh mint
- 1/4 cup minced scallions
- 2 medium tomatoes seeded and diced
- 1 medium cucumber seeded and diced
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground pepper
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
How To Make tabbouleh

Step 1Combine bulgur and boiling water and soak for 1 hour. Drain well and squeeze out any excess water.

Step 2In a large bowl, combine bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, cumin, black pepper and lemon juice. Chill for 1 hour.

Step 3Immediately before serving, add olive oil and stir well
