  • 1 c
    fine bulgur
  • 1 c
    boiling water
  • 3 c
    finely chopped fresh parsley
  • 1/4 c
    finely chopped fresh mint
  • 1/4 c
    minced scallions
  • 2 medium
    tomatoes seeded and diced
  • 1 medium
    cucumber seeded and diced
  • 1/2 tsp
  • 1/4 tsp
    ground cumin
  • 1/4 tsp
    ground pepper
  • 3 Tbsp
    lemon juice
  • 3 Tbsp
    olive oil

How to Make Tabbouleh


  1. Combine bulgur and boiling water and soak for 1 hour. Drain well and squeeze out any excess water.
  2. In a large bowl, combine bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, cumin, black pepper and lemon juice. Chill for 1 hour.
  3. Immediately before serving, add olive oil and stir well
