I can't take credit for this but I made it one day after I had cooked a Cook's ham and found this in their website. My son took some to work and has had requests for more of the same. I am making more today. You have to like horseradish - they are good.

  • 1/2 c
    finely chopped leftover ham
  • 6
    hard cooked eggs
  • 3 Tbsp
    mayonnaise or salad dressing
  • 1 1/2 tsp
    prepared horseradish
  • 1 tsp
    ground dry mustard
  • 1/2 tsp
    lemon juice
  • dash(es)
  • dash(es)
    ground black pepper
  • ·
    ground red pepper to taste

How to Make Stuffed Eggs


  1. Cut eggs in half lengthwise. Remove yolks to bowl and mash. Add ham, mayonnaise, horseradish, mustard, lemon juice, salt and pepper. Mix well.
  2. Spoon egg yolk mixture into whites and sprinkle with red pepper. Refrigerate at least an hour before serving.
  3. Amount of servings would depend on how many eggs you cook.
