A nice "southwestern" touch to regular pinto beans. Feel free to spice them up with additional hot sauce or jalapenos. A great bbq side dish. *Prep time does not include soaking the beans overnight.

Ingredients

  • 1 pound dried pinto beans
  • 5 cups water (or more as needed)
  • 1 onion, chopped
  • 6 cloves garlic, chopped
  • 1 bay leaf
  • 3/4 cup ketsup
  • 6 tablespoons dark brown sugar (packed)
  • 5 tablespoons yellow mustard
  • 2 tablespoons chili powder
  • 2 tablespoons worchestershire sauce
  • 1 tablespoon paprika
  • hot pepper sauce to taste
  • 1 1/2 teaspoons dried thyme

How To Make spicy-sweet bbq pinto beans

  • Step 1
    Place beans in a dutch oven with enough water to cover the beans by 3 inches and let soak overnight.
  • Step 2
    Drain beans and return them to the pot. Add 5 cups of water, chopped onion, garlic, and the bay leaf to the pot. Bring to a boil and cook until just tender, stirring occasionally - approx. 1 hour.
  • Step 3
    Stir in remaining ingredients and simmer until beans are very tender and flavors have blended well - approx. 30 minutes. Season to taste with salt and pepper.
