Sour Cream Avocado Pie

How to Make Sour Cream Avocado Pie
1Preheat oven to 325.
Scoop avocado from shells, chop and mash (or put chunks into blender, blend until smooth).
2Beat egg yolks until thickened.
Add: avocado, milk, 4 Tbsp lemon juice, salt and vanilla. Beat until smooth.
3Pour into pie shell, bake for 20 minutes.
4Cool pie for 30 minutes. Combine sour cream, sugar, and remaining 1 Tbsp lemon juice. Spread over pie. Bake 10 more minutes.
