Ingredients
- 2 - avocados, ripe
- 2 - egg yolks
- 1 can evaporated milk
- 4 tablespoons lemon juice
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 - 9" pre-baked pie shell
- 1 cup sour cream
- 3 tablespoons sugar
- 1 tablespoon lemon juice
How To Make sour cream avocado pie

Step 1Preheat oven to 325. Scoop avocado from shells, chop and mash (or put chunks into blender, blend until smooth).

Step 2Beat egg yolks until thickened. Add: avocado, milk, 4 Tbsp lemon juice, salt and vanilla. Beat until smooth.

Step 3Pour into pie shell, bake for 20 minutes.

Step 4Cool pie for 30 minutes. Combine sour cream, sugar, and remaining 1 Tbsp lemon juice. Spread over pie. Bake 10 more minutes.

Step 5Chill before serving.
