    5 oz pkg fine egg noodles
  • 2 tbs
    safflower oil
  • 1 cup
    bamboo shoots
  • 1 cup
    sliced mushrooms
  • 1 cup
    sliced almonds
  • 1/2 cup
    chicken broth
  • 3 tbs
    soy sauce
  • ·
    salt to taste

How to Make Soft Fried Noodles with Mushrooms


  1. Cook noodles in large pot in boiling, lightly salted water 8 minutes, drain well
  2. Heat oil in wok or skillet over low heat. Add noodles; stir fry 4 minutes. Stir in bamboo shoots, mushrooms,and almonds; mix thoroughly. Stir in broth, soy sauce, and salt. Reduce heat to low; simmer, covered, 20 minutes or until liquid is almost absorbed.
