Ingredients
- one - 5 oz pkg fine egg noodles
- 2 tbs - safflower oil
- 1 cup - bamboo shoots
- 1 cup - sliced mushrooms
- 1 cup - sliced almonds
- 1/2 cup - chicken broth
- 3 tbs - soy sauce
- - salt to taste
How To Make soft fried noodles with mushrooms

Step 1Cook noodles in large pot in boiling, lightly salted water 8 minutes, drain well

Step 2Heat oil in wok or skillet over low heat. Add noodles; stir fry 4 minutes. Stir in bamboo shoots, mushrooms,and almonds; mix thoroughly. Stir in broth, soy sauce, and salt. Reduce heat to low; simmer, covered, 20 minutes or until liquid is almost absorbed.
