smoking maple bacon cranberry pumpkin bowls

This is one of my family favorite recipes I make over the years. I have this recipe in my fall cookbook, I got at a fall festival, and it is a wonderful dish to try. It's savory and sweet and yummy it's best with bourbon. We always had it with our turkey or with any meat you like. It's a great fall dish. It's a must try. Hope you enjoy it as much as we do.

Ingredients

  • 2 2.5 small sweet baby pumpkins for pumpkin pies
  • 2Tbsp olive oil
  • 1/2 tsp garlic powder
  • 5 slices bacon, cut into 1-inch pieces
  • 1 cup white onion chopped
  • 1/2 tsp smoked paprika
  • 1/2 cup dry sweetened cranberries
  • 3 Tbsp pure maple syrup
  • 3/4 cup fresh orange juice
  • 1 Tbsp orange zest
  • 1/4 tsp salt
  • 1/2 tsp lemon pepper
  • 1/4 cup gouda cheese regular
  • 2Tbsp fresh chopped chives
  • 2 Tbsp chopped roasted pecans

How To Make smoking maple bacon cranberry pumpkin bowls

  • Step 1
    Heat oven to 400 degrees
  • Step 2
    Put pumpkins in microwave and cook on high for 9 minutes
  • Step 3
    Cut pumpkins in 1/2 and scoop out the seeds and discard
  • Step 4
    Brush olive oil in each half and sprinkle with garlic salt
  • Step 5
    Roast for 20 minutes or until soft
  • Step 6
    Place 2 pumpkins upright on cookie sheets
  • Step 7
    Now Peel 2 remaining pumpkins and cut into 1-inch cubes, set aside
  • Step 8
    Now meanwhile, in a large skillet on medium heat, saute bacon until almost Crisp and add your onions and paprika, cook for 5 minutes or until onions begin to softened. Turn heat to medium and add cranberries and maple syrup and saute, stir continually for 1 minute. Stir in orange juice, zest, lemon pepper and pumpkin cubes. Cook and cover on medium-low for 5 minutes until pumpkin is fully cooked. Pour into pumpkin bowls and add cheese and chives, baked at 400 degrees for 10 minutes until warm throughout and cheese has melted.. sprinkle with toasted pecans and cut into quarter pieces and serve. Serves 8
