A BBQ is not complete unless you have a side of beans. That's my story, and I'm stickin' to it. This recipe makes a small batch for 4. It can be easily doubled or tripled for a larger yield. These beans have a bit of a bite from the Tabasco Sauce, and are not particularly sweet. The addition of Whiskey just seems right for anything "Cowboy". This is an easy recipe. Once in the oven, they don't require much attention, so you are free to attend to your main dish. I have given the option to substitute olive oil for the bacon fat, for Vegan and Vegetarian Diets.

Ingredients

  • 1 can 15 oz beans, undrained (pinto, black, or kidney)
  • 1/4 medium onion, chopped
  • 1 medium carrot, peeled and grated
  • 2 cloves garlic, large
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dry oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon tabasco sauce
  • 2 tablespoons ketchup
  • 2 tablespoons bourbon or whiskey
  • 1 tablespoon dark brown sugar
  • 2 teaspoons bacon fat, if vegetarian use olive oil

How To Make side o' cowboy beans

  • Step 1
    Combine all ingredients in a large mixing bowl. Mix well.
  • Step 2
    Transfer beans to a crock or other baking dish.
  • Step 3
    Bake uncovered at 325 degrees for 1 hour 30 minutes. Stir a few times. Serve hot. Serves 4.
