Ingredients For scalloped potatoes with bacon

  • 2 1/2 lb
    Russet potatoes
  • 1 lg
    yellow onion
  • 4 oz
    Gruyere cheese
  • 4 oz
    mild Swiss cheese
  • 2 c
    heavy cream
  • 1 tsp
    thyme, dried
  • 1 tsp
    granulated garlic
  • 8-10 slice
    bacon
  • 1 tsp
    pepper
  • 1 tsp
    salt

How To Make scalloped potatoes with bacon

  • Slicing peeled potatoes on a mandolin.

    Peel potatoes. Using your mandolin, slice potatoes and onion very thin. Set aside.
  • Grated Gruyere and Swiss cheese, heavy cream, thyme, and garlic in a saucepan.

    In a small saucepan, melt 3/4 of the grated Gruyere and Swiss cheese in heavy cream adding the thyme and garlic.
  • Crumbled bacon on a plate.

    Fry bacon in a skillet until crisp, but not overcooked. Crumble in pieces.
  • Layering elements of the scalloped potatoes.

    In a baking dish, layer potatoes, onions, a small amount of bacon. Season each layer with salt and pepper. Continue layering until all potatoes, bacon, and onion are used.
  • Cream and cheese over the final layer.

    Pour the cream and cheese over each layer. Finish the top with the last amount of grated cheese.
  • Dish covered in foil and baking in the oven.

    Place covered in a 350 oven for 1 hour and 15 minutes until most of the liquid has been absorbed.
  • Baking uncovered until cheese is golden brown.

    Uncover and continue cooking until the top is browned to your satisfaction!
