There are no better scalloped potatoes than these. I took them to a Christmas party and everyone asked for the family recipe.

There's not a thing in the world that could improve on this creamy, satisfying scalloped potatoes recipe... except maybe adding even more bacon! The potatoes are tender with a tangy and creamy sauce. We loved all the cheesy goodness and the bits of smoky bacon throughout.

Ingredients

  • 2 1/2 pounds Russet potatoes
  • 1 large yellow onion
  • 4 ounces Gruyere cheese, shredded
  • 4 ounces mild Swiss cheese, shredded
  • 2 cups heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon granulated garlic
  • 8-10 slices bacon
  • 1 teaspoon pepper
  • 1 teaspoon salt

How To Make scalloped potatoes with bacon

  • Slicing peeled potatoes on a mandolin.
    Step 1
    Preheat oven to 350 degrees F. Peel the potatoes. Using a mandolin, slice the potatoes and the onion very thin. Set aside.
  • Grated Gruyere and Swiss cheese, heavy cream, thyme, and garlic in a saucepan.
    Step 2
    In a small saucepan, melt 3/4 of the shredded Gruyere and Swiss into the heavy cream. Add the thyme and garlic.
  • Crumbled bacon on a plate.
    Step 3
    Fry the bacon in a skillet until crisp, but not overcooked. Crumble into pieces.
  • Layering elements of the scalloped potatoes.
    Step 4
    In a baking dish, layer the potatoes, onions, and a small amount of bacon. Season each layer with salt and pepper. Continue layering until all potatoes, onion, and bacon, are used.
  • Cream and cheese over the final layer.
    Step 5
    Pour the cream and cheese over the entire thing. Finish the top with the last amount of grated cheese.
  • Dish covered in foil and baking in the oven.
    Step 6
    Cover the dish and bake for 1 hour and 15 minutes until most of the liquid has been absorbed.
  • Baking uncovered until cheese is golden brown.
    Step 7
    Uncover and continue cooking until the top is browned to your satisfaction!
