A super easy side dish - great when summer corn is in abundance. You can use frozen corn, but it won't taste nearly as good.

Ingredients For scalloped corn

  • 2 c
    fresh corn kernels
  • 2 lg
    eggs, beaten
  • 1 c
    whole milk
  • 2/3 c
    saltine crackers, crushed (or bread crumbs)
  • 1 Tbsp
    onion, minced
  • 3 Tbsp
    unsalted butter, melted
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 Tbsp
    sugar

How To Make scalloped corn

  • 1
    Preheat oven to 350F. Lightly grease a 2 qt casserole dish.

    Place all the ingredients into a large mixing bowl. Stir until ingredients are well distributed. Spoon into the prepared pan.

    Bake for 40 minutes until bubbly and golden.
