savory so-good stuffing

My husband and I are not big fans of sage which seems to be the ingredient in all stuffing recipes. He concocted this recipe about 10 years ago and it is now a family favorite. Good for chicken, turkey, even pork chops :-)

Ingredients

  • 1 stick butter
  • 1 large onion, minced
  • 1 large garlic clove, minced
  • 1/2 pound button mushrooms, sliced
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 1/2 cup parsley flakes
  • 1 teaspoon fresh rosemary, crushed
  • - salt & pepper to taste
  • 1 - loaf of fresh bread (1 lb. 20 oz. pkg.), cubed

How To Make savory so-good stuffing

  • Step 1
    In large, heavy skillet, melt 1 stick of butter.
  • Step 2
    Add onion; saute for 3 minutes.
  • Step 3
    Cover; steam onions for 10 minutes.
  • Step 4
    Add remaining ingredients, in order given, folding gently until well combined.
  • Step 5
    This will stuff up to a 15 lb. turkey or chicken. If you have any leftover stuffing, keep warm and set aside. When turkey or chicken is finished cooking, remove stuffing from inside bird and stir into reserved stuffing.
