This is a summer favorite and a great side dish. It's super easy and quick to prepare while making your other dishes.

Ingredients

  • - 6 - 8 banana peppers
  • - 1/2 pound ground sausage, browned
  • - 1/4 cup chopped onions, green onions with tops are fine, too
  • - approximately 1 teaspoon of your favorite cajun seasoning
  • - shredded colby jack or cheddar cheese

How To Make sausage stuffed banana peppers

  • Step 1
    Preheat oven to 350°. Spray oven dish with cooking spray and set it aside. Have a small saucepan of boiling water on the stove eye. Split banana peppers in 1/2 and wash and clean out seeds, etc. Dip peppers in boiling water and lower temperature of eye. Cook just until peppers are about 1/2 done. Meanwhile, brown sausage. Add onions and cook until translucent. Add seasoning. Mix well. With tongs remove pepper from water and place in baking dish. Spoon sausage mixture into peppers and cover with shredded cheese. Bake about 10 minutes until completely done. Sprinkle with more cheese and place back in oven for about 1 minute until cheese is melted. NOTE: I have used ground beef instead of sausage, too.
