Ingredients
- 2 cups chicken stock
- 1 1/2 cups frozen peas
- 2 tablespoons butter
- 1/4 tube saffron threads
- 1 1/4 cups couscous
- 1/4 cup fresh chives chopped
How To Make saffron couscous with peas and chives

Step 1Add the broth to a medium saucepan. Bring to a boil. Reduce heat to a simmer and add the peas and cook 3 minutes. With a slotted spoon remove the peas to a plate.

Step 2Add the butter and saffron to the broth. Bring back to a boil whisking until butter is melted. Stir in the couscous and place a cover over the pan and remove from heat.

Step 3Let stand about 5 minutes until the liquid is absorbed. Fluff with a fork and stir in the peas and chives. Serve
