We serve this on Christmas Eve or on Easter.

Ingredients

  • 1 1/4 cups thin carrots chopped coarsely and cooked till tender
  • 2 cups beets, cut julianne style,
  • 4 - extra large organic, hard boiled eggs, chopped coarsely
  • 1/4 cup picked herring in sour cream, chopped fine
  • 1/3 cup helm's mayonnaise, or make your own
  • 2/3 cup sour cream
  • 2 cups left over ham or beef, cut into small cubes
  • 1 - small purple onion, cut into thin slice for garnish

How To Make russian beet salad

  • Step 1
    Mix all together and set in refrig to chill.
  • Step 2
    Serve with dinner.
  • Step 3
    If you don't like Herring..leave it out.
