Ingredients
- 1 1/4 cups thin carrots chopped coarsely and cooked till tender
- 2 cups beets, cut julianne style,
- 4 - extra large organic, hard boiled eggs, chopped coarsely
- 1/4 cup picked herring in sour cream, chopped fine
- 1/3 cup helm's mayonnaise, or make your own
- 2/3 cup sour cream
- 2 cups left over ham or beef, cut into small cubes
- 1 - small purple onion, cut into thin slice for garnish
How To Make russian beet salad

Step 1Mix all together and set in refrig to chill.

Step 2Serve with dinner.

Step 3If you don't like Herring..leave it out.
