  • 1 1/4 c
    thin carrots chopped coarsely and cooked till tender
  • 2 c
    beets, cut julianne style,
  • 4
    extra large organic, hard boiled eggs, chopped coarsely
  • 1/4 c
    picked herring in sour cream, chopped fine
  • 1/3 c
    helm's mayonnaise, or make your own
  • 2/3 c
    sour cream
  • 2 c
    left over ham or beef, cut into small cubes
  • 1
    small purple onion, cut into thin slice for garnish

How to Make Russian Beet Salad


  1. Mix all together and set in refrig to chill.
  2. Serve with dinner.
  3. If you don't like Herring..leave it out.
