Ingredients
- 16 cups thinly sliced cucumber, washed but not peeled
- 2 cups thinly sliced sweet onion
- 4 cups sugar
- 2 cups apple cider vinegar
- 1 teaspoon celery seed
- 1 teaspoon turmeric
- 1/2 teaspoon powdered alum
How To Make refrigerator pickle

Step 1Mix cucumbers and onion and sprinkle 3 Tbsp. of salt all over, mix with hands, and let stand for 3 hours.

Step 2WHILE YOU WAIT mix your vinegar solution of sugar, apple cider vinegar, celery seed, turmeric, and powdered alum. Stir occasionally to dissolve sugar.

Step 3After 3 hours, drain cucumbers/onions and pour vinegar solution over them. This makes 1 gallon or 4 quarts. Store in refrigerator (doesn't have to be sealed as when canning).

Step 4They are ready to eat in 24 hours and will keep for 1 year. Enjoy!
