Refried beans are ok straight from the can, but I wanted to make them a little fancier! You can replace the yogurt with sour cream. Either fat-free or regular refried beans will work.

Ingredients For refried beans up a notch

  • 1 tsp
    olive oil
  • 1/4 c
    chopped poblano or jalapeno pepper
  • 1/4 c
    chopped onion
  • 1 can
    refried beans (15 oz or so)
  • 2 Tbsp
    plain greek yogurt or sour cream
  • 1/2 c
    shredded mexican cheese mix, divided
  • hot sauce, to taste
  • green onion and/or cilantro, chopped, for garnish

How To Make refried beans up a notch

  • 1
    Heat oil, add peppers and onion. Saute until onion is transluscent.
  • 2
    Add beans, yogurt and half of the cheese. Stir together and heat until cheese has completely melted.
  • 3
    Sprinkle with rest of cheese, chopped green onion, cilantro and hot sauce to serve.
