refried beans up a notch
Refried beans are ok straight from the can, but I wanted to make them a little fancier! You can replace the yogurt with sour cream. Either fat-free or regular refried beans will work.

Ingredients
- 1 teaspoon olive oil
- 1/4 cup chopped poblano or jalapeno pepper
- 1/4 cup chopped onion
- 1 can refried beans (15 oz or so)
- 2 tablespoons plain greek yogurt or sour cream
- 1/2 cup shredded mexican cheese mix, divided
- hot sauce, to taste
- green onion and/or cilantro, chopped, for garnish
How To Make refried beans up a notch

Step 1Heat oil, add peppers and onion. Saute until onion is transluscent.

Step 2Add beans, yogurt and half of the cheese. Stir together and heat until cheese has completely melted.

Step 3Sprinkle with rest of cheese, chopped green onion, cilantro and hot sauce to serve.
