Living in southern Arizona for the winter inspires me to find local recipes to enjoy. When you add the chili powder, make sure you use actual ground chiles, not the chili powder in the little jar from the grocery store. That kind includes a bunch of fillers, etc.

Ingredients
- 1 pound pinto beans, dried
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 ounces salt pork, or bacon
- 1/2 cup pure chili powder
- salt and pepper, to taste
How To Make ranch beans

Step 1Wash and sort beans. Put in large pot, cover with water and let soak overnight.

Step 2Drain, add fresh water to cover. Add other ingredients, except for the salt and pepper.

Step 3Bring to a boil, then reduce to a simmer for 2-3 hours or until beans are tender. Scoop off any foam that forms on top.

Step 4Add salt and pepper to taste.
