This colorful tasty salad is loaded with flavor! It’s easy to make and a great lunch recipe or side dish to enjoy!

Ingredients

  • 1 cup quinoa, pre-soaked
  • 2 cups cold water
  • ground Himalayan pink salt, to taste
  • 1 cup diced smoked ham
  • 1 cup peeled, quartered and sliced cucumbers
  • 1 cup mixed cherry tomatoes, washed and halved
  • 1/3 cup diced red peppers
  • 1/3 cup diced orange peppers
  • 1/3 cup diced red onions
  • 1 can corn kernels, drained (15 oz./432 g)
  • 1 can sliced black olives, drained (2.25 oz./64 g)
  • 1 cup feta cheese, crumbled
  • 2 tablespoons chopped cilantro, for garnish

How To Make quinoa summer salad

  • Step 1
    In a saucepan, add drained quinoa, cold water and sea salt. Stir well and bring the mixture to a boil.
  • Step 2
    Cover, reduce to low and cook for 15 minutes.
  • Step 3
    Remove from the heat and let it rest, covered, for 8 minutes before transferring to a large salad bowl.
  • Step 4
    Add the remaining ingredients and gently toss until mixed. Garnish with cilantro and serve immediately.
