Ingredients
- 1 cup quinoa, pre-soaked
- 2 cups cold water
- ground Himalayan pink salt, to taste
- 1 cup diced smoked ham
- 1 cup peeled, quartered and sliced cucumbers
- 1 cup mixed cherry tomatoes, washed and halved
- 1/3 cup diced red peppers
- 1/3 cup diced orange peppers
- 1/3 cup diced red onions
- 1 can corn kernels, drained (15 oz./432 g)
- 1 can sliced black olives, drained (2.25 oz./64 g)
- 1 cup feta cheese, crumbled
- 2 tablespoons chopped cilantro, for garnish
How To Make quinoa summer salad

Step 1In a saucepan, add drained quinoa, cold water and sea salt. Stir well and bring the mixture to a boil.

Step 2Cover, reduce to low and cook for 15 minutes.

Step 3Remove from the heat and let it rest, covered, for 8 minutes before transferring to a large salad bowl.

Step 4Add the remaining ingredients and gently toss until mixed. Garnish with cilantro and serve immediately.
