Ingredients

  • 2 Tbsp
    flour
  • 1-3/4 c
    wkole milk
  • 3
    eggs, beaten
  • 1 c
    pumpkin puree
  • 1 tsp
    salt
  • 2/3 c
    sugar
  • 1/4 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 3 1/2 c
    fresh or frozen corn
  • 3 Tbsp
    melted butter

How to Make PUMPKIN CORN PUDDING

Step-by-Step

  1. PRE HEAT OVEN TO 350
  2. IN A LARGE BOWL, WHISK FLOUR WITH MILK TIL SMOOTH. WHISK IN THE 3 BEATEN EGGS AND PUMPKIN. ADD SALT,SUGAR, CINNAMON, AND NUTMEG. BLEND WELL, STIR IN CORN.
  3. IN 2QT. CASSEROLE SWIRL MELTED BUTTER TO COAT BOTTOM. POUR PUMPKIN MIX INTO CASSEROLE; COVER LOOSELY WITH FOIL.
  4. BAKE UNTIL SET 30-40 MIN. UNCOVER AND BROWN THE LAST 5 MIN.
