  • 1-3/4 cup wkole milk
  • 3 - eggs, beaten
  • 1 cup pumpkin puree
  • 1 teaspoon salt
  • 2/3 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 1/2 cups fresh or frozen corn
  • 3 tablespoons melted butter

How To Make pumpkin corn pudding

  • Step 1
    PRE HEAT OVEN TO 350
  • Step 2
    IN A LARGE BOWL, WHISK FLOUR WITH MILK TIL SMOOTH. WHISK IN THE 3 BEATEN EGGS AND PUMPKIN. ADD SALT,SUGAR, CINNAMON, AND NUTMEG. BLEND WELL, STIR IN CORN.
  • Step 3
    IN 2QT. CASSEROLE SWIRL MELTED BUTTER TO COAT BOTTOM. POUR PUMPKIN MIX INTO CASSEROLE; COVER LOOSELY WITH FOIL.
  • Step 4
    BAKE UNTIL SET 30-40 MIN. UNCOVER AND BROWN THE LAST 5 MIN.
