pickled mushrooms and onions

Ingredients
- 1/3 cup red wine vinegar
- 1/3 cup vegetable oil
- 1 medium onion, sliced thin and rings separated
- 1 teaspoon salt
- 2 teaspoons parsley flakes
- 1 teaspoon prepared mustard
- 2 - 4 tablespoons brown sugar
- 2 jars mushroom caps, drained (6 oz each)
How To Make pickled mushrooms and onions

Step 1In a sauce pan, combine all ingredients except the mushrooms. Bring to a boil.

Step 2Add mushrooms, reduce to a simmer. Simmer 5-6 minutes.

Step 3Pour into a bowl, let cool 30 minutes or so, then cover and chill overnight.

Step 4Serve chilled or at room temp.
