My mother in law, Sandy, makes noodles for darn near every family get together, and most of the family puts these over mashed potatoes. This is how she makes them...and does it with veggie broth for my daughter, or chicken normally. Enjoy!

Step 1In a pot with a lid (she uses what I call a spaghetti pot), put in the broth you choose. According to Sandy, use as much as you want depending upon how soupy you want the noodles to be, and she suggests more, since the noodles absorb the broth anyway).

Step 2Let the broth come to a simmer, where it starts to steam, but not boiling. Add noodles. Continue to simmer, covered, until you get the texture you want.

Step 3There are no ingredient amounts in the recipe, because it will depend on how many people you are serving, and how soupy you want your noodles. She uses a big can of chicken broth, or a box of vegetable broth basically to 1 package of noodles, but also always has extra broth, again, because it absorbs the broth as the noodles sit while the family scoops it up!
