Ingredients
- 2 1/2 cups cooked pearl Israeli couscous, cooled to room temperature
- 2 cups diced tomato
- 1/2 cup diced cucumber, remove seeds
- 1 can drained garbanzo beans (chickpeas)
- 1 can artichoke heart quarters, (packed in water and drained) chopped
- 1/4-1.2 cup fresh flat leaf parsley, chopped
- 4 tablespoons fresh lemon juice
- 1 clove garlic, minced (or to taste)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 3-4 tablespoons extra virgin olive oil
- salt and pepper, to taste

Step 1Allow couscous to come to room temperature.

Step 2Combine remaining ingredients with couscous.
