I love the Mediterranean flavors of this couscous salad. Feel free to add additional ingredients of your choice.

Ingredients

  • 2 1/2 cups cooked pearl Israeli couscous, cooled to room temperature
  • 2 cups diced tomato
  • 1/2 cup diced cucumber, remove seeds
  • 1 can drained garbanzo beans (chickpeas)
  • 1 can artichoke heart quarters, (packed in water and drained) chopped
  • 1/4-1.2 cup fresh flat leaf parsley, chopped
  • 4 tablespoons fresh lemon juice
  • 1 clove garlic, minced (or to taste)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 3-4 tablespoons extra virgin olive oil
  • salt and pepper, to taste

How To Make my favorite couscous salad

  • Step 1
    Allow couscous to come to room temperature.
  • Step 2
    Combine remaining ingredients with couscous.
  • Step 3
    Serve at room temperature or chilled.
