Ingredients For my favorite couscous salad

2 1/2 ccooked pearl Israeli couscous, cooled to room temperature

2 cdiced tomato

1/2 cdiced cucumber, remove seeds

1 candrained garbanzo beans (chickpeas)

1 canartichoke heart quarters, (packed in water and drained) chopped

1/4-1.2 cfresh flat leaf parsley, chopped

4 Tbspfresh lemon juice
-
1 clovegarlic, minced (or to taste)

1/2 tspground cumin
-
1/2 tspground coriander
-
3-4 Tbspextra virgin olive oil

salt and pepper, to taste
How To Make my favorite couscous salad

1Allow couscous to come to room temperature.

2Combine remaining ingredients with couscous.

3Serve at room temperature or chilled.
