Ingredients For my favorite couscous salad

  • 2 1/2 c
    cooked pearl Israeli couscous, cooled to room temperature
  • 2 c
    diced tomato
  • 1/2 c
    diced cucumber, remove seeds
  • 1 can
    drained garbanzo beans (chickpeas)
  • 1 can
    artichoke heart quarters, (packed in water and drained) chopped
  • 1/4-1.2 c
    fresh flat leaf parsley, chopped
  • 4 Tbsp
    fresh lemon juice
  • 1 clove
    garlic, minced (or to taste)
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    ground coriander
  • 3-4 Tbsp
    extra virgin olive oil
  • salt and pepper, to taste

How To Make my favorite couscous salad

    Allow couscous to come to room temperature.
  • 2
    Combine remaining ingredients with couscous.
  • 3
    Serve at room temperature or chilled.
