This is my recipe for calico beans. Very similar to how my brother makes his. I've always loved the combination of mixed beans in my baked beans. Try them for your next cookout, you will be pleased. Enjoy!

Ingredients

  • 10 - 12 slices bacon, cooked and chopped - i also cook 2 - 3 slices thick bacon for the top, optional
  • 1/2 tablespoon oil
  • 1/2 pound ground chuck
  • 1/2 medium onion, chopped
  • 1 - 15 ounces can, each - butter beans & dark kidney beans - drained and rinsed
  • 1 - 15 ounces can - pork & beans, juice too
  • 2/3 cup packed, brown sugar
  • 1 tablespoon dijon mustard
  • 2 tablespoons unsulphered molasses
  • 1/2 cup ketchup
  • 1/2 teaspoon each - salt, pepper and chili powder

How To Make ~ my calico beans ~

  • Step 1
    In a skillet cook onion and ground chuck in oil, breaking apart meat as it cooks, until onion is tender and meat is no longer pink. Drain if necessary. Add all remaining ingredients and stir to thoroughly blend.
  • Step 2
    Pour beans into a 1 1/2 quart casserole that's been sprayed with non stick cooking spray. Top with bacon slices if desired and bake in a 350 degree oven for 50 minutes - 1 hour.
  • Step 3
    Enjoy these yummy beans at your next picnic.
