My husband loves these as a topping on bbq hamburgers.

Ingredients

  • 1 gallon green tomatoes
  • 12 large onions
  • 3 cups brown sugar, lightly packed
  • 3 cups white vinegar
  • 3 tablespoons pickling spice, in a cheesecloth bag
  • 1 tablespoon celery seed
  • 1 tablespoon tumeric

How To Make mum's green tomato pickles

  • Step 1
    Slice tomatoes and onions and arrange in layers in an enamel canner with a generous sprinkling of picking salt between each layer. Let stand overnight.
  • Step 2
    In the morning drain and wash the contents very thoroughly with cold water and return to rinsed out canner.
  • Step 3
    Tie all spices in a cheesecloth bag and boil with the vinegar and sugar then add to the tomato and onions in the canner.
  • Step 4
    Boil gently until most of the liquid has gone, about an hour. Remove spice bag. Ladle tomatoes in sterilized jars and seal.
