How to Make Mum's Green Tomato Pickles
- Slice tomatoes and onions and arrange in layers in an enamel canner with a generous sprinkling of picking salt between each layer. Let stand overnight.
- In the morning drain and wash the contents very thoroughly with cold water and return to rinsed out canner.
- Tie all spices in a cheesecloth bag and boil with the vinegar and sugar then add to the tomato and onions in the canner.
- Boil gently until most of the liquid has gone, about an hour. Remove spice bag. Ladle tomatoes in sterilized jars and seal.
