Ingredients For mom's vadalia onion relish

  • 1 gal
    sweet or vadalia onions, chopped
  • 3 lg
    bell peppers, all colors, chopped
  • 2 or 3
    hot banana peppers, chopped
  • 3/4 c
    pickling or canning salt
  • 2 Tbsp
    pickling spice, in bag
  • 1 tsp
    mustard
  • 1/2 tsp
    tumeric
  • 1 tsp
    celery seed
  • 2 1/2 c
    sugar
  • 2 1/2 c
    white vinegar

How To Make mom's vadalia onion relish

  • 1
    Mix onions, peppers and salt in cold water to cover, let sit overnight. Drain and rinse.

    Mix together spices, sugar and vinegar in canner or pot large enough to hold everything and bring to a boil. Add onion mixture and bring back to a boil. Put in hot jars and seal.
