My mom's recipe, great with pinto's and cornbread.

Ingredients

  • 1 gallon sweet or vadalia onions, chopped
  • 3 large bell peppers, all colors, chopped
  • 2 or 3 - hot banana peppers, chopped
  • 3/4 cup pickling or canning salt
  • 2 tablespoons pickling spice, in bag
  • 1 teaspoon mustard
  • 1/2 teaspoon tumeric
  • 1 teaspoon celery seed
  • 2 1/2 cups sugar
  • 2 1/2 cups white vinegar

How To Make mom's vadalia onion relish

  • Step 1
    Mix onions, peppers and salt in cold water to cover, let sit overnight. Drain and rinse.
  • Step 2
    Mix together spices, sugar and vinegar in canner or pot large enough to hold everything and bring to a boil. Add onion mixture and bring back to a boil. Put in hot jars and seal.
