So many flavors are in this dish. The corn and fresh cilantro with lime juice are tasty enough on their own but then you add in the chili powder, garlic, and that tangy cheese and it is like a mariachi band on your taste buds.

  • 4 cups corn kernels, fresh
  • 1 tablespoon butter
  • 1 teaspoon chili powder, hot
  • 1 teaspoon garlic powder
  • 1 pinch salt
  • 1 can black beans, drained
  • 1/4 cup mayonnaise
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 cup feta or cojita cheese
  • 1 tablespoon cilantro, fresh
  • 1 tablespoon lime juice
  • 1 small grated lime zest

    In a cast-iron skillet, cook together corn, butter, chili powder, garlic powder, salt, and black beans.
