mexican essentials: refried beans & bacon

I made this for our Cinco de Mayo celebration. This was a small test batch, and after everyone had a bite or two, it was on the menu. It has a little bit of heat, provided by the ancho chili powder and cayenne; however, you can control that to your own taste. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 slices bacon, diced
  • 1/2 medium yellow onion, fine dice or grated
  • 2 teaspoons ancho chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper, or to taste
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • 15 ounces pinto beans, drained, 1 can
  • 1/2 cup chicken stock
  • OPTIONAL TOPPINGS
  • your favorite cheese
  • sliced black olives

    What you will need? I make this in a cast-iron skillet, but any good skillet will do just fine.
  • Step 3
    What to serve with it? Actually, I enjoy a bowl of these flavorful beans all by themselves; however, they would be good as a side for a variety of Mexican dishes.
  • Step 4
    How to store it? These beans will last 3 – 4 days in the fridge, or several months, if properly stored in the freezer.
  • Step 5
    Gather your ingredients (mise en place).
  • Step 6
    Dice the bacon. This process goes better if it is partially frozen before dicing.
  • Step 7
    Add the diced bacon to a skillet over medium heat.
  • Step 8
    Cook until the fat has rendered, and the bacon begins to crisp, about 10 – 12 minutes. Then, drain the bacon and reserve.

    Add the onions to the bacon fat.
  • Step 10
    Cook until the onions begin to soften, about 2 – 3 minutes.
  • Step 11
    Add the dry spices and mix into the onions.
  • Step 12
    Add the beans and chicken stock.
  • Step 13
    Use the back of your spoon to crush up the beans.

    Some people like a smooth texture; others want it a bit chunky. Up to you.

    Allow to simmer until it thickens, about 10 – 12 minutes.

    Sprinkle the top with the reserved bacon. If you are adding the cheese and olives, add them now and allow to melt into the simmering beans… Total Yum.
