- 3 tablespoons unsalted butter
- 3 eggs, separated
- 2 cups cottage cheese
- 1/3 cup semolina flour
- 1 tablespoon heavy cream
- 2 tablespoons flour
- powdered sugar

Step 1Cream the butter and beat in the egg yolks, one at a time. Stir in the cheese, semolina and cream. Mix well, cover and let stand for 45 minutes Whisk the egg whites into a grease-free bowl until stiff, then carefully fold into the cheese mixture together with the flour. Boil a very large pan of salted water. Scoop spoonfuls of mixture about the size of a plum and roll into ovals or balls with damp hands. Drop the dumplings into the boiling water and simmer for about 7 minutes. Remove with a slotted spoon and drain well. Serve warm, dredged with the confectioner's sugar.

Step 2Notes: From food histories, this variety is Austrian in origin, which accounts for the name. Given the partitions of Poland over the years, this would seem to have migrated north to the Krakow region during the Austrian occupation.
