This is a rich, moist cornbread dressing. Who needs turkey? Just give me the dressing!!! This is my mother's recipe.

Ingredients

  • 1 box cornbread mix, mixed according to the box
  • 6 - eggs
  • 2-3 - celery stalks, diced
  • 1 large onion, diced
  • INGREDIENTS FOR DRESSING
  • - baked cornbread, cooled & crumbled
  • 1 package herb seasoned dressing mix
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1 teaspoon poultry seasoning

How To Make mama's cornbread dressing

  • Step 1
    Mix the cornbread mix according to box directions, except increase the eggs to 6.
  • Step 2
    Add the diced celery and onion to the cornbread batter.
  • Step 3
    Bake at temperature suggested on the box in an iron skillet, if possible, until cornbread is golden brown and done in the middle (check by sticking a sharp knife into the center) Cornbread may be baked 2-3 days before dressing is to be made.
  • Step 4
    Crumble cooled cornbread, and then add the remainder of the ingredients. Bake in a 350 degree oven until dressing is as done as YOU like it....about 30-45 minutes. Don't overcook or it will be dry.
