So delicious that even carrot haters love this recipe. No one knows that they are eating carrots. Fill center with peas or any vegetable to your liking.

  • 1 c
  • 1/2 c
    brown sugar
  • 1 c
  • 1 1/2 c
    grated raw carrots, drained
  • 2
    eggs, separated
  • 1 Tbsp
    lemon juice (optional)
  • 1 Tbsp
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 tsp
  • 1 tsp
  • 1/4 tsp

How to Make Incredible Carrot Ring


  1. Cream butter and brown sugar.
  2. Add carrots, egg yolks, lemon juice and water.
  3. Sift dry ingredients and then add.
  4. Fold in stiff egg whites.
  5. Put into a greased ring mold, spread with bread crumbs (optional)
    Place in refrigerator overnight. This mellows the flavor. (optional)
    Remove from refrigerator 1 hour before baking. (optional)
  6. Bake at 350 degrees for 15 minutes, then 375 degrees for 30 minutes.
