Quick and easy to make, these fritters make a fantastic side dish, but also great as a snack or appetizer with a dipping sauce.

Ingredients

  • 1 cup medium-grind yellow cornmeal
  • 2/3 cup unbleached all-purpose flour
  • 1/2 tablespoon baking powder
  • 3/4 teaspoon ground Himalayan pink salt
  • 1/2 tablespoon baking soda
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup yellow onion, finely chopped
  • 2 tablespoons red pepper, finely chopped
  • 1 large room temperature free-range egg, beaten
  • 3/4 cup buttermilk
  • 4 cups canola oil, or as needed for frying

How To Make hush puppies

  • Step 1
    In a bowl, add cornmeal, flour, baking powder, salt, baking soda, sugar, smoked paprika, and cayenne pepper; whisk until blended.
  • Step 2
    Add onion, red pepper, beaten egg, and buttermilk; stir until combined. Let it rest for 15 minutes.
  • Step 3
    In a deep skillet over medium-high heat, bring the oil temperature to 375 degrees F.
  • Step 4
    Using a 1 1/2-inch portion scoop, drop the batter in hot oil, 5 to 6 at a time (don’t crowd the pan). Fry until golden brown, about 1:30 minutes, flipping once.
  • Step 5
    Using a spider strainer, transfer to a plate lined with paper towels to absorb excess oil. Set aside while making the remaining ones.
