Cornmeal and water baked cakes was used throughout the early colonies. Corn was inexpensive and grown every where. In the south they were called Hoe Cakes because some times slaves working in the fields would cook them on the end of a hoe.
We are fortunate to have a stove and a griddle to cook them on, and enjoy, this treat from the past.
P.S. Good with maple syrup.

Ingredients

How to Make HOE CAKES ................. Old Southern Recipe

Step-by-Step

  1. Combine cornmeal and salt. Stir in water, cool.
    Divide mixture into 8 portions (about 1/3 cup each).
    Shape each portion into a 3-inch round patty.
    Fry over medium heat on a well greased griddle, turning to brown both sides, about 7 minutes each side. Makes 8 hoe cakes.
    Serve with butter,lots of butter! yeah! YUM!
