This is a very quick and easy salad. I love the flavor that grilling the corn adds, but if you can not grill you can add a can of corn. Goes great with a veggie burger or any burger for that matter.

Ingredients
- 1 1/2-2 cups grilled corn (about 2 ears)
- 1 1/2 cups cherry tomatoes (halved)
- 1 cup diced cucumber (peeled and seeded)
- 1/4 cup diced red onion
- 1 tablespoon olive oil
- 3/4-1 teaspoon smoked paprika
- - salt and pepper to taste
How To Make grilled corn salad

Step 1Grill the corn on the cob, and then remove the corn. Add corn, cucumber, tomatoes, onion; then add olive oil, smoked paprika, and salt and pepper to taste. Serve immediately. You can also chill for about an hour for a light crispness.
