Ingredients

  • 1 bunch green onions, white and dark green parts separated
  • 2 tablespoons olive oil
  • 2 cups milk
  • 2 cups water
  • salt and pepper
  • grits
  • 2 cups grated white cheddar cheese
  • 4 tablespoons butter

How To Make green onion grits

  • Step 1
    Bring a pot of water to a boil. Add salt and green parts of the onions and blanch for about 30 seconds. Remove with slotted spoon to a paper plate lined with a paper towel. Dry, slice small, and place in food processor with the olive oil. Process until smooth; set aside.
  • Step 2
    Add the milk, water, and salt and pepper to a large pot. Bring to a boil. Add the grits, stirring constantly and slowly. Reduce the heat to low, cover and cook about 20 minutes until done and creamy.
  • Step 3
    Add the cheese, butter and grean onion puree and cook until the cheese melts. Remove from heat and top with the whites of the green onions.
