Ingredients
- 2 tablespoons olive oil
- 1 1/2 cups yellow onions, diced
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- ground himalayan pink salt, to taste
- 1/2 cup red peppers, diced
- 2 large cloves garlic, pressed
- 1 can (15 oz.) petite diced tomatoes, undrained
- 1/3 cup low-sodium vegetable broth
- 1 tablespoon greek seasoning
- 1/4 teaspoon red pepper flakes, or more to taste
- freshly ground mixed peppercorns, to taste
- 1/4 cup fresh chopped parsley, plus more for garnish
- 1 can (15 oz.) lima beans aka butter beans, drained and rinsed
- 1/2 cup crumbled feta cheese, for garnish

Step 1In a large oven-proof skillet over medium heat, add oil and when it starts shimmering, add onions, carrots and celery; generously season with salt.

Step 2Cook for 9 minutes or until the veggies softened.

Step 3About 5 minutes through cooking, add red peppers; continue cooking until vegetables are tender.

Step 4Add garlic and sauté for 1 minute.

Step 5Add diced tomatoes, broth, Greek seasoning, red pepper flakes, black pepper, and parsley. Stir well and bring the mixture to a simmer.

Step 6Add beans, mix well, and cook for 5 minutes.

Step 7Preheat oven to 350 degrees F.

Step 8Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, or until beans are heated through.

Step 9Remove from the heat and allow to rest for 5 minutes before sprinkling on chopped parsley and garnishing with feta cheese.
